Proof of Work (PoW) acts as the bridge that fundamentally connects the external, physical realities of energy and time to Bitcoin's purely digital information realm.
Proof of Work links Bitcoin’s digital list (the ledger) to the physical universe by requiring and internalizing real energy. We all know that energy is there and cannot be faked or cheated. In the real world energy is everywhere and cannot be deleted but just transformed. For this reason we need to "digitalize" energy and bring it to Bitcoin.
The necessity of expending real-world energy gives Bitcoin its unforgeable costliness and a commodity premium, similar to gold, making it hard to create more of. Without the PoW there would be no link to the physical world and so no real value.
The energy spent via PoW is essential for defending the past (the known history of transactions in the chain). Because so much energy is expended to create historical blocks, it becomes impossible to travel backwards in time to change previous transactions, securing the undisputed history of events. So there is a line of events which cannot be inverted or faked.
Proof of Work is fundamental to implementing a distributed timestamp server on a peer-to-peer basis (a bit distributed clock). Bitcoin blocks are essentially transactions accompanied by the Proof of Work acting as a timestamp, effectively "etching time".
The difficulty-adjustement is another brick. it is made for making impossible to add resources and violate the speed and heartbeat on Bitcoin. So 10 minutes will be always 10 minutes and there will be no way to accelerate and produce Bitcoin faster. The speed limit is necessary to achieve the consensus into the distributed network.
Finally, Proof of Work is the innovative piece of technology that converts real-world, scarce energy expenditure into trustless, verifiable information that secures an independent, self-governing digital timeline, allowing Bitcoin's list (ledger) to function as a globally scarce, digital money. This is why Bitcoin needs it.
